As Director of Hospitality for AX Group, Claire brings exceptional vision and proven expertise to the Verdala. She oversees a prestigious portfolio of nine hotels and 25 restaurants, including the Michelin-starred Under Grain and five-star Rosselli AX Privilege. Recently appointed Director of AX Care, Claire combines hospitality excellence with wellness innovation. With a BSc in International Hospitality Management and global industry experience, she also remains committed to creating transformative guest experiences while driving positive social change as Chairperson of the AX Foundation.
Since joining AX Hotels in 2010, Camille has demonstrated remarkable leadership across multiple roles, from Events to Operations Management. Her deep understanding of luxury hospitality and commitment to excellence earned her the Chairman’s Award in 2019. With a degree in Tourism Studies and a Master’s in Hospitality and Event Management, Camille brings both academic expertise and hands-on experience to her role as Hotel Manager at the Verdala, where she oversees the seamless delivery of our transformative guest experience.
Chef Victor Borg brings a legacy of excellence to Verdala as AX Privilege Culinary Director. Renowned for his bold flavours and visionary technique, Victor’s career spans world-class kitchens including Gordon Ramsay’s Aubergine in London and the two-MICHELIN-starred Bagatelle in Oslo. As Executive Chef of Grain, he led Under Grain to a MICHELIN Star within five months, and later secured a MICHELIN Bib Gourmand for Grain Street—making Grain the first Maltese brand with two MICHELIN-rated venues under one roof.
A prodigy of Malta’s culinary scene, Victor became the country’s youngest National Chef of the Year at 24, later winning two WACS gold medals as team leader. He opened Mange Tout at 25, earning “Best Overall Restaurant” for seven years. A judge on MasterChef Malta and recent recipient of the WRMC Lifetime Achievement Award, Chef Victor now guides the culinary direction at Verdala, redefining contemporary Mediterranean cuisine with passion and precision.
As former Executive Sous Chef at the Michelin-starred Under Grain, Brady has mastered the delicate balance of exceptional gastronomy and mindful dining. Working closely with AX’s Executive Chef Victor Borg, Brady developed expertise in menu creation, staff leadership, and maintaining the highest quality standards. His innovative approach to conscious cuisine and proven operational excellence make him the perfect choice to lead Verdala’s transformative dining experience.
Brady’s talent has been recognised both locally and internationally, he was named Chef of the Year in 2018, earned a silver medal at the Rimini Global Chef Challenge in 2019, and went on to win the Overall Chef Trophy in 2020.
Amber is a holistic wellness visionary with over a decade in transformational leadership, blending entrepreneurial experience, C suite executive coaching and wellness technology innovation. As a Certified Coach and Spinal Energetics practitioner, she marries cutting edge science with timeless wisdom, drawing on three decades of meditation practice and global insight after living in five countries. At Verdala, Amber leads bespoke retreats and wellness initiatives rooted in trauma informed, regenerative approaches, inspiring renewal through expert energy management, conscious presence, and mind body coherence.
With over a decade of international hospitality experience and an MBA in hand, Anastasiia brings a wealth of knowledge and a refined approach to her role as Operations Executive at Verdala Wellness Hotel. With a career spanning prestigious properties such as St. Regis Nikolskaya and W Hotel Verbier, she is known for her precision, calm leadership, and dedication to service excellence. Her deep operational knowledge, combined with a passion for people, ensures the seamless coordination of departments and an elevated experience for every guest.
