At Under Grain, dishes have been reimagined as contemporary culinary masterpieces, skilfully combining seasonal and the most premium ingredients. Our dining experiences are complemented by an exceptional collection of international wines, carefully selected from our cellar, offering a delightful range of aromas to enhance each exquisite creation.

We take great pride in our refined service, aiming to leave you with a profound sense of satisfaction and the knowledge that classic dining still thrives in today’s culinary landscape. Our menu, recognised with the prestigious MICHELIN star accolade for five consecutive years, is curated to offer a concise yet diverse selection of dishes ensuring an unforgettable gastronomic journey.

Under Grain is inspired by Merchant Street’s former tailor shops and evidence of this theme is all around, from the sewing pattern menu to the clothing displays and even a pin-cushion bill-holder. As a tailor would create something exquisite from cloth, the chef here does the same with fine ingredients, skilfully applying his talent to produce a beautiful end product. Expertly cooked Mediterranean dishes burst with bold, gloriously harmonious flavours and, while their base may be classic, the overtones are modern.

Leading our culinary brigade is Executive Chef, Victor Borg, who brings a wealth of experience from culinary powerhouses like Gordon Ramsay’s world-famous Aubergine in London and Bagatelle, a two-MICHELIN-starred restaurant in Oslo. Chef Victor’s passion lies in the creativity of a dish. “I always explain that gastronomy is like fashion; it’s changing all the time, so you need to constantly update yourself and conduct research so that you’re learning something different every day. That’s my driving force.”

Under Grain’s Head Sommelier is Maurizio Severgnini, a well-travelled hospitality professional, specialising in sommelier duties. Appointed Head Sommelier of Under Grain in 2022, Maurizio works alongside the Under Grain team to provide the stellar service that is synonymous with the Grain brand while recommending the best blends to pair with Executive Chef Victor’s Michelin-rated cuisine.
